Winter Citrus Salad with Avocado and Pecans

This winter citrus avocado salad is a vibrant, flavorful dish that’ll brighten even the coldest days! Juicy orange slices and creamy avocado rest on tender butter lettuce, topped with beet microgreens and crunchy toasted pecans. Winter citrus steals the show—blood oranges and Cara Cara oranges are favorites, but you can mix in clementines, tangelos, grapefruits or navels. For perfect citrus slices, trim the top and bottom, then glide a sharp knife down the sides to remove the peel and pith. Slice into wedges or wheels, and you’re all set! Pair this refreshing salad with your favorite protein and crusty bread for a satisfying, eye-catching meal.

 

Winter Citrus Salad with Avocado and Pecans
Servings: 4 servings

Ingredients

  • 4 Cara Cara or Blood oranges remove the peel and pith and cut into 1/4 inch thick slices
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1/2 teaspoon honey
  • Squeeze of fresh lemon juice to taste
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
  • 5 cups Boston bib or butter lettuce
  • 1 cup microgreens I like the beet microgreens
  • 1 avocado sliced
  • 1/4 cup toasted pecans

Instructions

  • Whisk together the olive oil, sherry vinegar, honey and lemon juice until well combined. Taste and adjust the seasoning with salt and pepper.
  • Arrange the lettuce and the orange slices on a serving platter. Scatter the mircrogreens over the lettuce and add the avocado slices and the pecans. Drizzle the salad with the dressing and serve.
