Flourless Chocolate Cake Infused with Chipotle Chili Powder

Indulge your senses this Valentine’s Day with a decadent twist on this flourless chocolate cake with a secret spice! This rich and velvety dessert is not only gluten-free but also boasts a tantalizing hint of warmth and smokiness, thanks to the unexpected star ingredient of chipotle chili powder. The subtle kick from the chipotle adds a unique and delightful surprise, elevating this cake to a whole new level of sophistication. You might not detect the chili powder, but it intensifies the chocolate and the cinnamon flavors. I always recommend using good quality chocolate with at least 70% cacao. Guittard bittersweet baking wafers, which I enthusiastically recommend, are readily available in most markets. After baking, the cake needs refrigeration for a few hours or overnight. Serve it at room temperature with a sprinkling of confectioners’ sugar and fresh whipped cream.

 

Flourless Chocolate Cake Infused with Chipotle Chili Powder
Servings: 6 servings

Ingredients

  • 12 ounces good quality dark chocolate at least 70% cacao, chopped or use chocolate wafers
  • 1/2 cup (1 stick) unsalted butter cubed
  • 1/3 cup neutral cooking oil I like grapeseed oil but you could use canola oil
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon chipotle chili powder or to taste
  • 1/2 teaspoon Kosher salt
  • 6 large eggs at room temperature
  • 1 cup granulated sugar
  • confectioner's sugar for garnish
  • Whipped cream optional

Instructions

  • Preheat the oven to 350 degrees F. Coat a 9-inch springform pan with cooking spray. Then line the bottom of the pan with parchment paper and coat the paper with cooking spray.
  • Melt the chocolate and butter in a large heatproof bowl set over a saucepan filled with 1 inch of barely simmering water and stir until smooth. Make sure the bottom of the bowl does not touch the boiling water. Remove the bowl from the heat and stir in the oil, vanilla, cinnamon, chile powder and salt.

  • In the bowl of a standing mixer fitted with a whisk attachment, or with a hand-held mixer beat the eggs and sugar on medium-high speed until light in color, about 3 to 4 minutes. Using a spatula or wooden spoon, fold in the chocolate mixture until combined. Pour the batter into the prepared pan. Bake the cake until the top is just set and beginning to crack, and a toothpick or wooden skewer inserted into the center comes out moist but not really wet, about 35 minutes. Let the cake cool completely in the pan on a wire rack for about 1 hour. Remove the sides of the springform pan.
  • Cover the cake and refrigerate for at least 3 hours or up to 3 days. Let the cake stand at room temperature for about 30 minutes before serving. Dust with confectioners' sugar and serve with whipped cream, if desired.
