Baked Sweet Potato Chips

Homemade sweet potato chips are not only simple to make, but they’re also packed with nutrients and a lot of fun to prepare! Sweet potatoes are rich in vitamins A and C, fiber and potassium, making them a wholesome alternative to regular potato chips. Making your own chips at home lets you control the ingredients, so you can skip the preservatives and avoid extra salt!

To get started, thinly slice your sweet potatoes using a mandolin for perfectly even slices that crisp up beautifully in the oven. The key is to slice them very thin so they get golden and crunchy without burning. Be sure to use a safety guard, a cut-resistant glove, or even a kitchen towel between your hand and the sweet potato to protect your fingers from the sharp blade. If you don’t have a mandolin, a sharp knife will also do the trick, though it may take a bit more care to get uniform slices. Once baked, these crunchy chips are best enjoyed the same day, when they’re at peak crispness, but you can store any leftovers at room temperature for a day or two. Crafting your own sweet potato chips is not only a healthier choice but also a fun activity to enjoy, especially on cozy fall evenings!

 

Baked Sweet Potato Chips
Servings: 3 cups

Ingredients

  • 1 medium sweet potato peeled
  • 3 tablespoons extra-virgin olive oil
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  • Pre-heat the oven to 275 degrees F. Place an oven-safe roasting rack over a roasting tray or baking sheet. If you don’t have a rack then just coat the sheet tray with a little oil. Using a mandolin or a really sharp knife, carefully slice the potato into very thin slices (1/8 of an inch thick).
  • Place the potato slices into a bowl and cover with the olive oil. Using your hands, massage the oil onto the slices until evenly coated. Lay the slices of potato in a single layer on the rack. Sprinkle with salt and pepper. Bake the chips for about 50-60 minutes. Rotate the tray halfway through baking and turn the chips over so they cook evenly on both sides. Bake until the chips are golden brown. They will crisp up as they cool. Serve the chips plain or with your favorite dip.
