Ingredients
- 4 cups mixed salad greens
- 2 ripe nectarines or peaches pitted and sliced
- 1 ripe avocado sliced
- 1 cup cherry or grape tomatoes
- 3 mini cucumbers sliced
- 6-8 ounces fresh mozzarella cheese or burrata cheese
- 1/4 cup pumpkin seeds (pepitas)
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- Splash of extra-virgin olive oil
- Splash of good quality balsamic vinegar

Instructions
- In a large salad bowl or serving platter, add the mixed greens. Arrange the nectarine slices, avocado slices, tomatoes, cucumber slices and mozzarella cheese on top of the greens. Sprinkle the pepitas on top. Season with salt and pepper to taste. You can make or use your favorite salad dressing. I added just a splash of extra-virgin olive oil and a good quality balsamic vinegar. Toss the salad and serve.
