Pumpkin purée is low in calories, high in nutrients and readily available. It is a great source of potassium, fiber and Vitamin A. Don’t mistakenly purchase pumpkin pie filling which is spiced and already sweetened. Canned pumpkin is cooked and pureed pumpkin flesh, nothing more. I usually grab a few extra cans this time of year for soups/chilis, pancakes/waffles, as an addition to oatmeal, and of course baked goods. I thought it might be fun to make a fall inspired pumpkin smoothie. Change up what you put in your smoothie, maybe add your favorite flavored protein powder too.

Ingredients
- 1 cup milk of your choice I used cashew milk
- 1 15 ounce can pumpkin puree
- 1 tablespoons ground flax seed
- 1 large apple cored and cut into quarters
- 1 teaspoon pure vanilla extract
- 1-2 tablespoons pure maple syrup optional
- 1 teaspoon ground cinnamon
- Pinch fine sea salt
- 1 cup ice cubes
Instructions
- Purée all ingredients in a blender. Blend until smooth and creamy. If the mixture is too thick you can thin it out with your "milk" choice or water. Enjoy!
