What a blast I had making boozy watermelon popsicles! Perfect for pool parties or a relaxing afternoon to beat the heat. These boozy treats combine the sweet, juicy flavor of fresh watermelon with a kick of vodka, creating an irresistible and fun frozen delight. I whipped up two delicious batches: one spiked with citrus vodka and a non-alcoholic version with fresh-squeezed orange juice. Both pops were scrumptious and refreshing summer treats! With only eight popsicle molds, I used the extra watermelon juice to make ice cubes. Although the watermelon juice separates and settles at the bottom of the pops, it doesn’t affect the taste at all. And whatever you do, don’t skip the fresh mint—the combination of mint, melon and citrus is fantastic!

Ingredients
- 1 1/2 pound watermelon (seedless) cut into small chunks
- 1/2 cup vodka I used citron vodka or fresh squeezed orange juice
- 2 tablespoons honey or to taste
- 1/2 cup fresh mint leaves
Instructions
- Combine the watermelon chunks, vodka or orange juice, honey and mint leaves in a blender. Blend until the mixture is smooth. You could strain the mixture if needed. Pour the mixture into the pop molds. Insert the handles that come with the mold set or use wooden popsicle sticks. Freeze the pops overnight.
- To remove the pops from the mold, run them under hot tap water to loosen. Serve immediately.
