Celebrate and savor watermelon season by grilling thick, sweet slices! Whether you fire-up your grill or use a grill-pan, grilled watermelon is healthy and delicious. Simply cut your watermelon into thick slices leaving the rind on. Grilling watermelon changes the texture of the fruit, brings out its natural sweetness and adds a subtle smoky flavor. I grilled lime halves alongside the watermelon. With a pinch of sea salt, fresh mint leaves and a squeeze of the smoky lime juice, you have an easy, healthy dessert.
Ingredients
- 1 small watermelon cut into 1 inch thick wedges
- 1 lime cut in half
- 1-2 tablespoons extra-vigin olive oil

Instructions
- Heat a grill or grill pan to medium high heat. Brush both the watermelon wedges and the lime halves with the olive oil. Cook until grill marks form and the fruit softens slightly, about 2-3 minutes per side. Squeeze the grilled lime over the watermelon wedges and sprinkle with mint and flaky sea salt, and serve.
