  • 1 small head radicchio chopped

  • 1 English cucumber or a couple of Persian cucumbers
  • 1/2 head fresh fennel thinly sliced

Honey Mustard Vinaigrette

  • 1/2 cup extra-virgin olive oil
  • 3 tablespoons good quality balsamic vinegar
  • 1 teaspoon Dijon or course-grain mustard
  • 2 teaspoons honey
  • splash of fresh orange juice optional
  • Kosher or sea salt, to taste
  • Freshly ground black pepper, to taste
