Winter Salad
- 1 head Tuscan (Lacinato) kale or a bag of baby kale leaves
- 1 small head radicchio chopped
- 1 orange peeled and segmented
- 1/2 cup pumpkin seeds (pepitas) or nuts or seeds of your choice
- 1 English cucumber or a couple of Persian cucumbers
- 1/2 head fresh fennel thinly sliced
Honey Mustard Vinaigrette
- 1/2 cup extra-virgin olive oil
- 3 tablespoons good quality balsamic vinegar
- 1 teaspoon Dijon or course-grain mustard
- 2 teaspoons honey
- splash of fresh orange juice optional
- Kosher or sea salt, to taste
- Freshly ground black pepper, to taste
