Spicy Watermelon and Feta Salad

Servings 4 servings

Ingredients

  • 4 cups cubed fresh watermelon
  • 1 small jalapeño or serrano chili pepper seeds and stems removed and finely diced
  • 1/4 cup crumbled feta cheese
  • 5 fresh mint leaves cut into long thin strips (chiffonade)
  • zest of 2 limes
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • Pinch of sea salt

Instructions

  • Toss the watermelon cubes with the diced hot pepper and place in a serving bowl or on a platter. Top with the feta cheese and mint. Add the lime zest, lime juice and honey. Season with sea salt, gently toss to coat and serve.
