December 30, 2020 by pamflo

A sparkly, festive cocktail seems like the perfect way to close out a crazy year! The fresh orange juice in this cocktail recipe balances the tartness of the pomegranate juice. On another note, I want to say thank you to all my followers. I really appreciate your comments, questions, food photos and “likes”. I continue to welcome your feedback, thoughts and ideas. I look forward to more great food and drink recipes in 2021. Happy New Year to all!

Maple Cinnamon Applesauce

October 22, 2020 by pamflo

It is a beautiful fall season in New England. We went apple picking by appointment and it yielded both tart and sweet apple varieties. The wafting smell of simmering apples made the process of peeling and coring the apples worthwhile. Serve your applesauce with yogurt or oatmeal for breakfast, as a snack with some toasted nuts or as a side dish with your main course. I kept it simple with just cinnamon sticks, a pinch of nutmeg and maple syrup […]

Chocolate Dipped Figs

Chocolate Dipped Figs with Pistachios

September 24, 2020 by pamflo

Let’s talk a little about figs — Black Mission, Brown Turkey, Green Kadota and Calimyrna figs are the varieties that are commonly available. Although not local to New England, the season for figs starts in the spring and goes through October. I used Black Mission figs for this simple and delicious treat. Figs are a unique seeded fruit with a sweet jammy flavor and soft chewy texture. A great source of fiber and nutrients, they’re delicate with a short shelf […]

Grilled Pineapple Margarita

August 27, 2020 by pamflo

Mezcal, a Mexican distilled spirit made from different varieties of agave that can be made clear, golden or amber. Incredibly smoky, it adds a unique flavor to this margarita. The reason for the smokiness is because of the way the agave plant is cooked. Tequila, on the other hand, is made by distilling the juice of the blue agave plant. The combination of mezcal and tequila makes an extremely tasty margarita! I sweetened my cocktail with a little agave nectar and […]

Summer Plum Crumble

August 6, 2020 by pamflo

This is a perfect summer dessert using fresh, ripe plums. The farmers’ markets are brimming with succulent fresh fruit, and this recipe takes advantage of the stone variety. Try plums, peaches, nectarines or a combination of the stone fruits. This is a simple recipe with just sliced fruit and a flavorful, crunchy topping with oats, nuts, flour, brown sugar, spices and coconut oil to bind it together. Serve the crumble warm out the oven with your favorite ice cream!

Honeydew and Cucumber Gazpacho

July 23, 2020 by pamflo

This soup is a throwback to a fantastic gazpacho I had while traveling a few years ago in Missouri. This fun, hip restaurant in St. Louis had a fruit based gazpacho on their menu. The light, flavorful cantaloup gazpacho was garnished with toasted, chopped pistachio nuts and an optional dollop of tangy greek yogurt. I re-created the soup with honeydew melon and cucumber, and a garnish of lightly salted, crunchy chickpeas. This dish involves no cooking and makes a scrumptious […]

Tomato Citrus Salad

Tomato Citrus Salad

July 2, 2020 by pamflo

I’m struck by how delightful this tomato citrus salad is, with its distinct flavors. With the farmers markets re-opening and stocked with big, juicy tomatoes and fresh basil, this is a simple salad to assemble. The addition of avocado and crushed pistachios is optional, but adds crunch. Customize your own salad with a variation on the type of nuts or by adding fresh burrata or mozzarella cheese. Add a drizzle of good olive oil, a squeeze of orange juice and […]

Grilled Watermelon Slices

June 25, 2020 by pamflo

Celebrate and savor watermelon season by grilling thick, sweet slices! Whether you fire-up your grill or use a grill-pan, grilled watermelon is healthy and delicious. Simply cut your watermelon into thick slices leaving the rind on. Grilling watermelon changes the texture of the fruit, brings out its natural sweetness and adds a subtle smoky flavor. I grilled lime halves alongside the watermelon. With a pinch of sea salt, fresh mint leaves and a squeeze of the smoky lime juice, you […]

Red Sangria

June 18, 2020 by pamflo

The best part of making sangria whether it’s red or white is showcasing the beautiful seasonal fruit. This time of year, the fruit options are unlimited with peaches, plums, cherries, and melons ripe for the picking. For my wine choice, I selected a Spanish Rioja which is a blend of grapes varieties. You could use a Grenache, Tempranillo or Pinot Noir, pick something that is big, fruity and you would enjoy drinking on its own. I added thinly sliced citrus, […]

Blueberry Cornmeal Crostata

May 28, 2020 by pamflo

The approaching summer means blueberry season is almost here! Blueberries are believed to have the highest levels of antioxidants of any fruit. Although blueberries are healthiest when eaten raw, this rustic cornmeal fruit tart is a fun way to eat cooked blueberries and simple to make. The dough is similar to a cookie dough and just needs to be at room temperature to shape. This is an easy dessert that can be made in advance, just assemble the crostata and […]

Roasted Citrus Slices

January 23, 2020 by pamflo

Fresh produce is limited in New England in the winter months with the exception of citrus. The variety of citrus options are outstanding! These caramelized citrus slices can brighten any winter dish, and roasting intensifies the citrus flavors. The fruit can be served alongside roast meat, atop a grain or green salad, with granola and yogurt, or simply sprinkled with cinnamon for dessert. Experiment with different fruit, like tangerines, grapefruit and an assortment of oranges. I drizzled the citrus slices […]

Baked Stuffed Apples with Coconut

October 10, 2019 by pamflo

Apple season is here in full force and there is no shortage of apple varieties. The best baking apples balance both tartness and sweetness, and hold their shape during cooking. Granny Smith apples are a favorite among bakers, but Honeycrisp, Pink Lady and Cortland apples are great choices too. There are many ingredients you can use to stuff your baked apples. I decided to forgo the sugar, butter and oats, and use chopped nuts, dried fruit, shredded coconut, maple syrup, fresh […]

Red Wine Poached Pears

September 5, 2019 by pamflo

Red-wine poached pears are beautiful, sweet, tart and juicy. You couldn’t ask for a more perfect dessert for the end of summer and the start of fall! Poaching is a simple way to prepare and serve pears. Both Bosc and Comice pears are good choices for cooking and baking, because they hold their shape well. Slice a 1/2 inch off of the bottom to create a flat surface for the pear to stand for serving. Make sure to rotate the […]

Watermelon, Blueberry and Tequila Slushy

August 22, 2019 by pamflo

This slushy blender cocktail is perfect for a steamy summer evening. Instead of using ice, freeze the watermelon cubes ahead of serving. Place the cubes in a single layer on a parchment-lined baking sheet and freeze until solid. There is an abundance of peak produce at the farmers’ markets now, and in addition I purchased local raw honey to use as a sweetener. A simply syrup works as well. To make a simply syrup, simmer equal parts water and sugar […]

Watermelon and Tomato Gazpacho

July 11, 2019 by pamflo

The delightful flavors of watermelon, ripe tomatoes and cucumbers come together to create this sweet and savory chilled soup. With the added tang of a lime and the heat of a jalapeño, this is the perfect dish for a hot and steamy summer night! This soup can be served smooth or chunky. If you want a combination of both, puree the soup completely in a blender or food processor, and then add the extra finely diced watermelon and cucumbers. If […]

Blueberry and Cashew Smoothie

June 13, 2019 by pamflo

Blueberries are low in calories, high in fiber and help reduce the risk of chronic disease. Studies show that blueberries can improve heart and brain health, as well. Cashews have a sweet, buttery taste and are an excellent source of several vitamins, minerals and antioxidants. These healthy and delicious ingredients come together in this smoothie with the addition of mint leaves and a squeeze of lime juice. We’re on the cusp of blueberry season in Massachusetts, but feel free to […]

Strawberry Crisp

Nutty Strawberry Crisp

May 23, 2019 by pamflo

Strawberries are an iconic summer treat – sweet, juicy and a little tart. Fresh strawberries can be easily transformed into a bubbly, fragrant and beautiful dessert. This crisp is a perfect way to enjoy strawberry season. A lightly sweetened crumbly topping made with a variety of chopped nuts adds a nice crispy texture to each bite. I find the best way to enjoy this crisp is by serving it warm, maybe with some frozen yogurt or ice cream of your […]

Winter Cobb Salad

Fruity Cobb Salad

March 21, 2019 by pamflo

As spring arrives this variation on the Cobb salad could offer some diversity to your meal rotation, and take advantage of some of the beautiful winter produce that’s still available. It’s often hard motivating to make a homemade salad on a cold day, but you’re rewarded with an interesting dish that might have been just an average salad. As the bacon is cooking, blanch the green beans in salted boiling water and then transfer to an ice bath to stop […]

Raspberry Swirl Meringues

Raspberry Swirl Meringues

February 14, 2019 by pamflo

I was recently at Flour Bakery for one of Joanne Chang’s yummy salads. With such an amazing display of baked goods, there was no way I was leaving empty- handed. I purchased a beautiful pillowy meringue with a raspberry coulis. The fresh raspberry sauce is swirled in before baking using a wooden skewer or chopstick. In honor of Valentine’s day, I created these light crispy cookies at home. Meringues are low in calories, and a naturally gluten and dairy free […]

Roasted Citrus Slices

November 20, 2018 by pamflo

With the holidays around the corner and the assortment of tempting foods, I thought a simple, lightly sweetened citrus recipe could be a perfect alternative. We’re on the cusp of the citrus season, so try experimenting with the wide variety of oranges, tangerines and grapefruit. Serve these lightly caramelized slices and their accumulated juices over your favorite yogurt with sprigs of fresh mint for a scrumptious dessert. If you find yourself not wanting to heat the broiler, toss the fresh […]
