1smalljalapeño or serrano chili pepperseeds and stems removed and finely diced
1/4cupcrumbled feta cheese
5fresh mint leavescut into long thin strips (chiffonade)
zest of 2 limes
2tablespoons fresh lime juice
1teaspoonhoney
Pinch of sea salt
Instructions
Toss the watermelon cubes with the diced hot pepper and place in a serving bowl or on a platter. Top with the feta cheese and mint. Add the lime zest, lime juice and honey. Season with sea salt, gently toss to coat and serve.
