Winter Citrus Salad with Avocado and Pecans

January 12, 2023 by pamflo

This winter citrus avocado salad is beautiful and bursting with flavor! It’s a salad of juicy orange slices and avocado on a bed of butter lettuce, topped with beet microgreens and toasted pecans. I just love winter citrus especially blood oranges and Cara Cara oranges. Clementines, navel oranges, tangelos and grapefruit are all great choices. Use a sharp knife to cut off the top and bottom of the peel. Then cut off the peel from top to bottom, working your […]

Pumpkin Pie Smoothie

October 20, 2022 by pamflo

Pumpkin purée is low in calories, high in nutrients and readily available. It’s a great source of potassium, fiber and vitamin A. Don’t mistakenly purchase pumpkin pie filling which is spiced and already sweetened. Canned pumpkin purée is nothing more than puréed pumpkin flesh. I usually grab a few extra cans this time of year for soups, pancakes/waffles and baked goods. I added spinach to my smoothie which does turn the beautiful orange pumpkin flesh to a dull green, but adds vitamin […]

Grilled Romaine Salad

August 12, 2021 by pamflo

Romaine lettuce is the hero of a Caesar salad, mild tasting with sturdy leaves and a thick rib down the center. Perfect for grilling! Many variations of Caesar salad are still popular on restaurant menus today. The lettuce can be grilled in a grill pan or on your outdoor grill. I grilled the romaine hearts on the stove-top and dressed the leaves with a tangy citrus Caesar dressing. Anchovy paste adds that “umami” flavor to the dressing, but Worcestershire sauce or […]

Italian Wedding Soup

April 22, 2021 by pamflo

Wedding soup actually means the “marriage” of meat and greens. There are so many wonderful versions of this soup, and feel free to vary it as you wish. I made a large batch of meatballs with a combination of pork and beef, and baked them in the oven, instead of the traditional step of simmering the meatballs in chicken broth. Delicious! Once the soup was done, I stored each soup component separately – the broth, meatballs and noodles in order […]

Spicy Steak Lettuce Wraps

March 4, 2021 by pamflo

Firing up your outdoor grill is not completely out of the question, as the temperature has been climbing and the snow melting! A stove-top grill pan works well too. The secrets to juicy tender steak is letting the meat come to room temperature for about 15-30 minutes before cooking, and using a meat thermometer to cook it to your desired temperature. Let the meat rest after cooking for about 5 minutes or so before slicing. The last tip is one I […]

Hearty Winter Vegetable Soup

February 25, 2021 by pamflo

It’s been a cold winter in Boston and this hearty vegetable soup just hits the spot. This can be a “clean out your refrigerator” soup, using whatever veggies you have on hand. In addition to onion, celery and garlic, I used a combination of sweet and regular potatoes, butternut squash, rainbow carrots and a large handful of greens. I added a bit of smoked paprika to my soup as it adds a delicious subtle smokiness. A generous splash of sherry […]

Chopped Kale and Brussels Sprout Salad

November 19, 2020 by pamflo

With Thanksgiving one week away, here is an easy raw salad to lighten your meal. The combination of flavors is fantastic, but feel free to mixed it up and use almonds, pistachios or pepitas and tart dried cherries, as a substitute for the walnuts and cranberries. Brussels sprouts are especially rich in vitamin K and vitamin C. They have a high fiber content which helps support regularity and gut health. Brussels sprouts, broccoli, cabbage and cauliflower as well as other cruciferous vegetables are […]

Shaved Asparagus Salad

May 21, 2020 by pamflo

Spring is here, and the fresh, beautiful stalks of asparagus are in season. Asparagus is a great source of vitamin C and folate. This shaved asparagus salad is fresh and super easy to prepare. I briefly steamed the asparagus prior to shaving it into thin slices with a vegetable peeler. You are welcome to shave it raw, but a little heat increases the nutrient benefits. Trim the spears by snapping one and cutting the rest to match the broken spear. […]

Hearty Minestrone Soup

April 30, 2020 by pamflo

There are many ways to make a delicious soup. The success of a soup is in the depth of flavors. The first layer of flavor is the pancetta, cured and salted pork belly. Olive oil is a good substitute if you don’t have or want to use pancetta. Another layer of flavor are the aromatics, vegetables used as a base flavor including, but not limited to, celery, carrots, onions and fresh herbs. Adding a piece of the rind from a […]

Ribollita Soup

Ribolitta Soup

March 19, 2020 by pamflo

I’ve been digging into my archives for easy recipes using pantry staples. Ribolitta is a Tuscan soup made with lots of vegetables and hunks of toasted or stale bread. Traditionally this soup is made with inexpensive vegetables like carrots, celery and onions as well as white beans, kale and cabbage. This hearty soup is easy to make and you can use whatever variety of veggies you have on hand. I often finish soups with a splash of acid, using either […]

Charred Broccolini with Slivered Almonds

March 12, 2020 by pamflo

This is a quick and easy vegetable dish to make! Broccolini is a cross between regular broccoli and Chinese broccoli. It has smaller florets and the entire plant is edible, including the stalks and leaves. Broccolini has a more mild and subtle earthy flavor, compared to regular broccoli. It has antioxidant properties and is high in beta carotene, which helps promote healthy skin. Broccolini can be sautéed, steamed, roasted, and grilled. With a couple of tablespoons of water I first steamed […]

Spicy Pork and Bok Choy Stir Fry

March 5, 2020 by pamflo

This is a delicious one-pot stir fry dish! Bok choy is a cruciferous vegetable that is part of the cabbage family. Cruciferous vegetables have sulforaphanes that help reduce inflammation in the body. Bok choy is a nutrient dense food that has a lengthy list of health benefits, including anti-cancer properties. Both the white and green part of the bok choy stalks are used in this recipe. The spiciness in this delicious dish comes from sambal oelek, an Indonesian chile paste made […]

Tuna Poke Bowl

August 15, 2019 by pamflo

This “do it yourself” poke bowl is fresh, customizable and there’s no cooking involved! Tuna is a good source of high quality protein containing many of our essential amino acids. Ahi tuna, also know as yellow-fin is the best tuna to use for this raw dish, although fresh salmon is a good alternative. Buy the freshest fish possible, sometimes referred to as “sushi-grade”. When shopping for fish, it should smell fresh and briny like the sea, the eyes should be […]

Winter Cobb Salad

Fruity Cobb Salad

March 21, 2019 by pamflo

As spring arrives this variation on the Cobb salad could offer some diversity to your meal rotation, and take advantage of some of the beautiful winter produce that’s still available. It’s often hard motivating to make a homemade salad on a cold day, but you’re rewarded with an interesting dish that might have been just an average salad. As the bacon is cooking, blanch the green beans in salted boiling water and then transfer to an ice bath to stop […]

Tuscan Bean Soup

Tuscan Kale Soup with Beans and Fregola

January 10, 2019 by pamflo

I made this soup for my son who had gotten sick this past week. As I served it to him still sleepy at 2pm, he devoured it but was confused about what the round starchy orbs in the soup were. I told him it was Fregola, which is an Italian semolina based pasta that has been toasted. “Yum”, he said! These tiny pasta rounds are a must have in soups adding a wonderful toasty flavor and texture. It sometimes can […]

Deconstructed Pan Bagnat

Provençal Tuna Salad

May 17, 2018 by pamflo

Pan Bagnant is a favorite French sandwich that literally means “bathed bread”. This popular sandwich is usually filled with many vibrant vegetables, hard boiled egg, canned tuna and then the bread is soaked in a zesty vinaigrette. With so many beautiful, nutrient dense ingredients, I thought it might be fun to deconstruct this sandwich and serve it as a salad. I roasted the peppers but you can use jarred roasted peppers instead. The dressing elevates an otherwise ordinary salad to […]

Veggie Frittata

Easy Veggie Frittata

May 10, 2018 by pamflo

A warm, custardy vegetable frittata is easier to make then you think! A great brunch idea for Mother’s Day, here are some tips that will help perfect your frittata. Use the right pan for the job, that is either a non-stick oven safe skillet or a well seasoned cast iron pan. After sautéing your potatoes and veggies until almost fully cooked on the stove top, add your vigorously whisked eggs to the pan and it will go into the oven […]

March 1, 2018 by pamflo

I’m just returning from a long weekend in New York City where I joined my fellow culinary professionals for a fantastic conference. It’s three intensive days of networking, workshops, field trips and sessions led by industry leaders. It’s an unbelievable community of food writers, food and prop stylists, cookbook authors, recipe testers, editors, agents and more. Tanimura Caesar Grilled Salad

Grilled Citrus Caesar Salad

January 18, 2018 by pamflo

The hero of a Caesar salad, romaine lettuce is a crisp, mild tasting lettuce with sturdy leaves and a thick rib down the center. Perfect for grilling! Many variations of Caesar salad are still popular on restaurant menus today. Not many of us in the Northeast are using our outdoor grills this winter, so this is a perfect recipe for a stove-top grill pan. I just completed my first freelance food project with a California-based farm called Tanimura and Antle. […]

Zucchini Pesto

Zucchini Pappardelle with Pesto

August 24, 2017 by pamflo

Zucchini pappardelle is a great pasta substitute, and combined with a fresh, tangy pesto, you hardly realize that you’re not eating any grains. I gave my spiralizer a short vacation and made zucchini ribbon “noodles” for this light summer dish. A wide vegetable peeler or a mandolin both work to create these pappardelle style noodles. To prevent the zucchini from become watery, place it in a colander and lightly salt it to withdraw some of the water. After coating the […]
