Morning Glory Muffins

May 19, 2022 by pamflo

There’s a great little place in Marston Mills on Cape Cod called Morning Glory Cafe. Although the cafe has a broad variety of breakfast and lunch items, their morning glory muffins are not to be missed. This is my best shot at creating a similar style muffin and I have to admit that these are really delicious!  Whole wheat flour or a mix of whole wheat and all-purpose flour do the trick, but I used white whole wheat flour which […]

Blueberry Muffins

January 6, 2022 by pamflo

Packed with antioxidants and nutrients, fresh blueberries are perfect for these muffins. However, if fresh blueberries are unavailable frozen berries will work as well. When you buy fresh blueberries and can’t use them all, freeze them. Gently wash and pat berries dry, pick through to remove the stems and squashed ones. Place the berries on a sheet tray in one layer, and place in the freezer. Once frozen, store in a zip-lock freezer bag until ready for baking. The blueberries […]

Pumpkin Spice Paleo Muffins

Paleo Pumpkin Chocolate Chip Muffins

October 15, 2020 by pamflo

The Paleo diet is one of the most searched diets on the internet and is about eliminating gluten, dairy, grains and refined sugar. It can be considered a restrictive way to eat but for people battling celiac disease, gluten sensitivity, autoimmune issues or just prefer a low inflammatory diet, it’s a great option. These delicious muffins take advantage of a variety of fall spices, and use almond and coconut flour in place of white flour. Pumpkin puree is high in […]

Double Chocolate Veggie Muffins

October 31, 2019 by pamflo

These are delicious muffins and you’d hardly know they contain vegetables, and in a small consumer taste test nobody knew! I really like the combination of shredded zucchini and mashed avocado as the base for the batter. I also like that it’s a low sugar treat and a solid breakfast idea. My muffins are dairy and free of gluten, as I substituted gluten-free flour for regular all-purpose. You don’t actually taste the zucchini in baked goods, but it provides moisture, […]

Carrot Muffins

Carrot and Apple Muffins

May 16, 2019 by pamflo

Looking for a breakfast treat that’s healthy, not too sweet and easy to make? Gluten and dairy free, these carrot muffins are just the right combination of sweet and savory. The muffins take a combination of some favorite pantry ingredients like applesauce, oats and nuts, and unites them with freshly grated carrots to create a delicious treat. The carrots provide a dose of both Vitamin A and Vitamin C. I’m not sure these delightful muffins will last very long, but […]

Peanut Banana Muffins

Peanut Butter Banana Muffins – Gluten Free

August 23, 2018 by pamflo

As we head for September, I’m ready to get back to baking. Always in need of a healthy, easy snack option, these muffins take a combination of some favorite pantry ingredients like bananas, peanut butter and dark chocolate and unite them in a portable treat. This is the type of recipe that can easily handle substitutions. Try blueberries or chopped nuts in place of the dark chocolate chips. Coconut oil or ghee can be used in place of the unsalted […]

Healthy Chocolate Breakfast Muffins

May 31, 2018 by pamflo

Looking for a breakfast treat that’s healthy, not too sweet and easy to make? These flourless, dairy free chocolate muffins are just the right combination of sweet and savory. These muffins contain amazing fudgy chocolatey-ness from good quality cocoa powder. Maybe chocolate is not a popular item on your breakfast menu, if that’s the case you can skip the sprinkle of dark chocolate chips. Avocado and coconut milk add the moisture and dates act as a natural sweetener. With so […]

Corn Biscuiits

Corn Biscuits

November 19, 2015 by pamflo

Buttery and sweet, the aroma in my house is reminiscent of past Thanksgiving celebrations. Baking bread is one of my favorite holiday projects, whether it be rolls, biscuits or muffins. Pastry chef, Alice Medrich’s recipe for corn biscuits is all the goodness of both biscuits and muffins in one tasty (gluten free) treat. I doubled the recipe and increased the size of the biscuits. I had in mind a turkey and cranberry biscuit sandwich for a post-Thanksgiving lunch. 1 1/3 cups (200 […]

Pumpkin Spice and Apple Muffins

November 5, 2015 by pamflo

The countdown to Thanksgiving has begun! The buzz usually begins when the November cooking magazine issue arrives, usually with a big, gleaming turkey on the cover. Spontaneously,  I took a Thanksgiving IQ quiz in one of the magazines and learned that I’m hardly a master, even after 14 years of hosting. I didn’t know that pumpkin pie is America’s favorite pie!  Talking about pumpkins, these pumpkin apple muffins make a great snack and actually have no white sugar, but are sweetened with maple syrup instead. […]

Gluten Free Muffins

Healthy Chocolate Chip Muffins

October 23, 2014 by pamflo

I occasionally dabble with gluten-free baking. Achieving a similar texture and flavor can be difficult when baking with gluten-free flour  substitutes. Alice Medrich, a renowned pastry chef and cookbook author, just published a book called “Flavor Flours”. She explains how to use alternative flours in a recipe for the purpose of adding texture and flavor. This could be a game changer for gluten-free baking! I spotted one of Alice’s recipes recently and I decided to give it a try.   These gluten-free […]
