Tinned Fish Board

Ingredients

  • 2-3 tins good quality fish or seafood
  • assorted olives
  • cornichons or other pickled vegetables
  • potato chips I love the Patatas Fritas by the Spanish brand Bonilla a la Vista
  • crackers and/or toasted slices of crusty bread
  • a selection of finishing salts
  • extra-virgin olive oil optional
  • assorted cheeses optional
  • fresh or dried fruit optional

Instructions

  • Open the tins of fish or seafood and drain only if necessary. Arrange the tins on a large serving board or platter. Add small bowls of olives, pickled vegetables and mustard, then fill in the board with potato chips, crackers and toasted bread. Finish with a few small piles of finishing salts and a drizzle of good olive oil, if desired. Serve immediately and let everyone build their own bites.
  • Choose tins with different flavors and textures rather than several similar fish. Pair a rich tuna or mackerel with briny mussels or anchovies, and don't automatically drain a good-quality olive oil packed tin. That flavorful oil is part of the board.
