Banana and Oat Bites

Banana Oat Bites

Servings: 1 dozen

Ingredients

  • 1 large ripe banana mashed into a paste
  • 1 cup very soft pitted dates mashed into a paste or very finely chopped
  • 2 3/4 cups old-fashioned rolled oats
  • 1 tablespoon pure vanilla extract
  • 1/4 teaspoon ground cinnamon
  • Pinch of Kosher salt or sea salt optional

Method

  1. Preheat oven to 350°F. Spray a non-stick cookie sheet with cooking spray or use a silicon baking sheet (Silpat). Combine the mashed banana, dates and oats in a medium bowl. Stir in the vanilla, cinnamon and add a pinch of salt. Mix well to combine. It'll be a sticky mixture.
  2. Drop about 2 tablespoon portions of the dough onto the baking sheet. Press down on the cookies to flatten. Bake the cookies for 13-15 minutes or until lightly browned on top. Remove the cookies from the oven and let cool for a few minutes. You can store the cookies in an airtight container at room temperature for up to 5 days.
