Pre-heat the oven to 400 degrees. Line a baking sheet with parchment or aluminum foil. Drizzle the oil on the paper or foil. Set tray aside. Using a very sharp knife, carefully cut the spaghetti squash in half lengthwise. You can microwave the squash for 2-3 minutes to soften it or roast the squash whole. Once cut open, remove the seeds and pulp from the center. Coat the squash with the olive oil and sprinkle with salt and pepper. Place the squash halves, skin side down on the prepared baking sheet. Bake for 30-40 minutes or until a knife slides through the skin easily. The outside skin will be lightly browned. Let the squash cool for a few minutes.
