Smoked White Fish Rillettes

What are rillettes, you ask? Rillettes are a traditional French spread similar to pâté usually using pork, duck or goose that is cooked, cooled and shredded. I thought it might be fun to create rillettes with smoked white fish, although this recipe is more of a chunky spread than a smooth pâté. I purchased a white fish fillet that had already been smoked. I then blended the shredded fish with crème fraîche, lemon zest, lemon juice, a generous amount of black pepper, and fresh chopped chives. Paired with cut veggies, crackers or crusty bread, this is a delectable and light appetizer or a simple lunch dish.

Instructions
  1. Purchase the white fish already smoked and remove any remaining bones. Shred the fish into small pieces. Add the crème fraîche and gently mix it with a fork. Add the lemon zest and lemon juice and taste. Mix in the chopped chives. Season to taste with pepper and a pinch of sea salt.
