I was completely on-board when Bulletproof coffee was all the rage as a replacement for breakfast, and to boost energy and endurance by adding grass-fed unsalted butter and coconut (or MCT) oil. I also added cinnamon and vanilla extract before whizzing my energizing beverage in a high speed blender.
This creamy cashew latte is lower in calories, dairy free, and a very satisfying alternative. I roasted unsalted cashews and used a couple of dates as a natural sweetener. I brewed a fresh pot of hot coffee and blended the cashews, the dates and a pinch of fine sea salt together in a blender. Give it a try!
Ingredients
- 1 1/2 cups freshly brewed coffee
- 1/4 cup unsalted roasted cashews
- 1-2 pitted dates or 2 teaspoons of maple syrup
- Pinch of sea salt

Instructions
- Place all ingredients in a high speed blender and CAREFULLY blend for about 1 minute or until smooth and creamy. *Never fill the blender more then halfway when blending hot liquid, as it expands. Also cover the top of the blender with a kitchen towel to let the steam escape safely. Serve the hot coffee in your favorite mugs or chill and serve over ice.
