I’m struck by how delightful this tomato citrus salad is, with its distinct flavors. With the farmers markets re-opening and stocked with big, juicy tomatoes and fresh basil, this is a simple salad to assemble. The addition of avocado and crushed pistachios is optional, but adds crunch. Customize your own salad with a variation on the type of nuts or by adding fresh burrata or mozzarella cheese. Add a drizzle of good olive oil, a squeeze of orange juice and this is an ideal appetizer or light lunch. It’s a perfect festive and seasonal dish. Enjoy the July 4th holiday!
Ingredients
- 2 large Heirloom tomatoes
- 2 oranges
- 1 avocado pitted and sliced
- 2 tablespoons extra-vigin olive oil
- 1/4 cup pistachios finely chopped
- juice of half an orange
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 5 fresh basil leaves chopped

Instructions
- Using a sharp serrated knife, cut the tomatoes into thick slices. Carefully slice the peel and remove pith off of the oranges and slice into rounds. Arrange the tomato, orange and avocado slices on a plate. Drizzle the olive oil over the plate, sprinkle with the chopped pistachios and add a squeeze of orange juice. Season with salt and pepper and add the fresh basil.
