Grilled Watermelon

Celebrate and savor watermelon season by grilling thick, sweet slices! Although it’s not the most beautiful dish, grilled watermelon is healthy, light and delicious. Whether you fire-up your grill or use a grill-pan indoors, make sure to lightly coat the watermelon with olive oil before grilling. The sweetness of the watermelon, combined with the salty feta and fresh mint, makes a great summer dish. I put my slices over an arugula salad for a light lunch!

  • 3-4 large slices of watermelon, cut into 1-inch-thick triangles
  • 3 tablespoons extra-vigin olive oil
  • 2 tablespoons balsamic vinegar
  • Sea salt, to taste
  • 2 ounces feta cheese, crumbled
  • Garnish- 2 tablespoons chopped fresh mint

 

Set the grill to medium-high, or heat a non-stick grill pan over medium heat. Lightly coat the watermelon with olive oil. Place the watermelon slices on the grill and cook about 3 minutes per side or until grill marks form. Remove the watermelon slices from the grill and sprinkle with sea salt. Drizzle with balsamic vinegar, and add the crumbled cheese and fresh chopped mint. The watermelon is delicious served both hot or at room temperature.
