This photo was taken at the bustling Pike Place Market in Seattle, where these yellow-skinned Mt. Rainier cherries are bright and fresh. Although both Bing and Rainier varieties are in season now, Rainier cherries aren’t always easy to find on the east coast, Bing cherries are perfect for this recipe. Beautifully deep red, tart and juicy, cherries are filled with antioxidants which can help reduce inflammation. Cherries naturally contain melatonin that can be a sleep aid.
This hot steamy northeast weather calls for a refreshing treat! Prepare to freeze the granita for a few hours before serving.
- 2 cups fresh cherries, pitted
- Juice of 1/2 an orange
- 1 tablespoon good raw honey
- Optional: 1-2 tablespoons vodka
Place the cherries in the food processor or blender and pulse until almost smooth. In a small bowl combine the orange juice and honey. Add the orange juice and honey and spin a few more seconds until combined. Add the vodka, if using. Pour the mixture into a small glass pyrex dish or shallow metal dish. Freeze for at least 2 hours or overnight. Garnish with fresh mint or basil.
