
Avocado Toast
Creamy and satisfying, avocado is a great part of any meal. Although high in calories, avocados provide a good dose of healthy fat, potassium, fiber and a variety of vitamins. When shopping for avocados, consider buying a few in different stages of ripeness, and avoid avocados that have soft spots and discoloration. Avocados are best when stored at room temperature. Wash the outside of the avocado before cutting, as not to transfer any bacteria from the skin to the inside. The flesh turns brown when introduced to the air. A squeeze of citrus will help delay this reaction. Store what you don’t use either wrapped tightly or in an airtight container in the refrigerator.
This mash is a perfect topping for a salad, slathered on warm toast, instead of mayo on a sandwich or served with smoked salmon, sliced turkey or poached eggs. The options are unlimited!
- 3 ripe Haas avocados, pitted
- Juice of 1/2 lemon
- 1 tablespoon avocado oil
- 4 large slices of good hearty bread, toasted (optional)
- Sea salt
- Freshly ground black pepper
- Red pepper flakes (optional)
Use a fork to mash the avocado. Mix the mash with the fresh lemon juice and avocado oil. Spread the mash over the slices of bread or over greens as a great addition to a salad. Sprinkle with the sea salt, black pepper and red pepper, if using.

I was so excited to see this post because I had forgotten about avocado mash. When we were in LA over xmas break we found this at a local restuarant and went there every morning for breakfast because it was so delicious. And, I happen to have had 2 perfectly ripe avocados in the house so I made this for breakfast today. So yummy!
How are you? It’s been so long since I’ve seen you. We’re good here. Enjoying our new house so much. I love the location and having more space. We are waiting to hear back from schools for Lindsey for next year – Beaver is our first choice. Is it still going well there for Jacob? How’s Lucas? Did you decide on a college?
I’m still teaching nutrition classes, playing lots of tennis, and going to CATZ. I’m almost done with our new house which has been keeping me busy for months – thoroughly enjoyable though!
