Watermelon Granita

Ripe, juicy watermelon, nothing could be more satisfying on a hot and steamy summer day. Cut into triangles, cut into cubes, served any way, watermelon is refreshing. I thought it might be fun to make a granita with the watermelon. It reminds me of the Italian ices from the old fashioned ice cream trucks. You can also make an adult version that contains rum or tequila.

  • 1/4 of a whole seedless watermelon
  • Juice of a lime
  • 1-2 tablespoons honey
  • Mint leaves
  • Rum or tequila (optional)

WatermelonPuree the watermelon in a blender and strain. Add the lime juice, honey and alcohol, if using. Place the mixture in a 9×13 inch baking dish and freeze for 3 hours. After the 3 hours, scrape down the top layer with a fork to create shaved ice. Repeat the scraping again after 2 hours. Repeat occasionally until the entire dish is shaved. Store covered in the freezer until ready to serve. Serve in a glass with a spring of mint. Serves 4.
