Pumpkin Pie Smoothie

Delicious pumpkin pie flavors in a smoothie and gluten free! Pumpkin purée is low in calories and high in nutrients. It is a great source of fiber, Vitamin A and iron. I’m a smoothie junkie and always looking for new ideas.  After a little experimenting I came up with a creamy pumpkin smoothie, reminiscent of pumpkin pie. I added spinach but this is optional. It does turn the beautiful orange smoothie to a dull green, but adds vitamin K and iron!

  • 1 cup pumpkin purée
  • 1 large ripe banana (frozen, if you have on hand)
  • 1 cup unsweetened almond milk, soymilk or coconut milk beverage ( I use almond milk)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon pure vanilla extract
  • 1 1/4 teaspoon pumpkin pie spice (or a teaspoon of cinnamon and a 1/4 tsp of freshly grated nutmeg)
  • 5 ice cubes
  • 1 scoop or a serving of good quality protein powder (optional)
  • 1 cup baby spinach leaves (optional)
Purée all ingredients in a blender. If the mixture is too thick you can thin with your “milk” choice or water.  Enjoy!

    I made this smoothie today, and modified slightly: I used half the honey, added a couple tsp. of coconut oil, used 1.5 cups of kale (instead of spinach), and added applesauce for additional texture and sweetener (needed to use it before it was outdated). In the future, I’d chop an apple, and maybe even add a raw carrot, but didn’t have time for chopping today. Found this to be a great recipe as is, or easily modified. My results were delish!!!
