Healthy Protein Pancakes

This is a great recipe for breakfast or a snack, I’ll make a batch, store in the refrigerator and toast them as I use them. They are delicious plain, with fresh fruit, and if you feel the urge…a little bit of maple syrup. Enjoy!
Protein Pancakes
  • 1 tub (16oz) fat free cottage cheese or part skim ricotta cheese
  • 12 egg whites  {Often, I use ten xl eggs in total including two yolks}
  • 1 cup of old fashioned Quaker Oats
  • 1 tablespoon of wheat bran flakes or flax seed/meal (optional)
  • 1 tsp of vanilla extract and a pinch of cinnamon
Blend these ingredients in a blender. Let it sit for a few minutes. Use this as the pancake batter to make 4 inch diameter pancakes. Allow them to cook on the bottom before turning over. Add slices of bananas, apples or berries before flipping over. Remove from skillet when cooked through.
Thanks to Julie Nicoletti from Kinetic Fuel, for the recipe!
