I just made a batch of these bars. The are absolutely delicious and require no cooking. These bars are packed with nutrients. This recipe came from a magazine that suggested this as a breakfast option….what a great idea! I toasted the nuts but it’s not necessary. Feel free to vary the choices of nuts and seeds.
Combine and heat 1/2 cup of honey, 1/4 cup of coconut oil and 1/4 cup almond butter with 1/4 teaspoon of sea salt, 1 teaspoon of vanilla and 1 teaspoon of cinnamon in a small saucepan over low heat.
In a large bowl, combine 1/2 cup of chopped almonds, 1/2 cup of chopped walnuts and 1/2 cup of dark chocolate chips. Add to this 1/4 of sunflower seeds, 1/4 cup of pumpkin seeds, 1/4 cup of gogi berries and 1 cup of rolled oats.
Stir the wet ingredients, once it’s cooled a bit, into the dry ingredients. The chocolate chips will melt if the mixture is still warm (as it did in my batch). Press this mixture into an 8×8 greased pan ( I grease with Pam spray :-). Refrigerate until hardened. Cut into 16 bars.
