Following the delicious dinner…I used some of our leftovers for lunch the next day. Using the arugula, a farm fresh tomato and some leftover sliced steak, I made an outstanding steak sandwich. I toasted whole grain bread and made a dressing with mayo, lemon juice, some very fragrant basil, horseradish and a drop of soy sauce.  This turned out to be a great combo of flavors. I cut up the extra peaches and added other fruit to make a side fruit salad. Yummy!!
